Coffee Rub
Ingredients:
- 2 tablespoons coarse salt
- 2 tablespoons instant coffee
- 2 tablespoons garlic powder
- 2 tablespoons smoked paprika
- 1 tablespoon pepper
- 1 tablespoon crushed coriander
- 1 tablespoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne
Mix all together and rub your meat as you see fit!
Bourbon Cream Sauce
Ingredients:
- 1/2 tbsp Butter – Block
- 1/2 cup Shallots
- 1/4 cup Jim Beam Bourbon
- 1/2 tbsp Chicken Stock
- 1 tsp Rosemary
- 1 tsp Thyme
- 1 tsp Salt
- 1/4 cup Bacon – cooked and chopped
- 4 cups quart Heavy Whipping Cream or half and half
- 1/2 tsp Ground Black Pepper
- 1/4 cup Liquid Roux – as needed (made by melting butter in pan and adding equal amount of flour to make a paste – then thinning with milk or water)
Heat butter in sauce pan. Sauté shallots in butter until lightly browned. Add cream, chicken stock, rosemary, thyme, salt, pepper and chopped bacon. Simmer for 15 minutes. Thicken as needed with liquid roux. Add bourbon and continue to cook a few minutes more.
Green Sauce
We put this shit on everything! This green sauce goes great on everything from steak, chicken, pork, to salad and it's simple! Combine the following in a blender:
- 1 and 3/4 Cups of mayo
- 2T water
- 2T white vinegar
- 1 fresh jalapeño (Seeds removed unless you want to hurt yourself tomorrow)
- 2 clove of garlic
- 1 bush of fresh cilantro
- 1/ tsp black pepper
Blend till smooth & Salt to taste (1 tsp to match the pepper)
